Made with pasteurized cows milk the Chablis is a gem from Burgundy, it is kept in a wooden box to maintain its shape and washed with a white wine and as the cheese matures the wine seeps in to the heart of the cheese, keeping it moist and giving it a rich, slightly fruity flavour. The rind turns a deeper shade of orange and the cheese beneath becomes creamier with a smooth melt in the mouth texture.  An exceptionally pleasing cheese, it is both delicate and full flavoured.
