Cooked Ham

Made only with the fresh thighs of heavy Italian pigs, over 15 kg in weight. The meat is salted and flavoured with a mixture of aromatic herbs then boned with care to ensure  muscle fibres do not tear. The ham is slowly cooked  in a steam oven at a temperature of around 68°. Good quality meat and care in processing. Only in this way will the cooked ham be soft and smooth, sweet and never acid.
