The cold climate of Capezzana and the fact the olives are picked in october give the oil a bright green colour and a fruity/ slightly peppery flavour.

The Fèlsina Estate is situated in Tuscany on the southern edge of Chianti.
The Raggiolo variety olives are grown on gentle hills on the edge of the Crete Senesi at an altitude of 350- 400 meters.
The olives are pressed using a continuous extraction method under nitrogen to protect against oxidation, The oil is pale green in colour with a fruity flavour and slightly spicy finish.
